Wow, where to begin on this one. Well, I guess the description on what's there - it's home made sweet potato gnocchi, brussels sprouts w/bacon & onions, and oven baked catfish. I made the gnocchi last night, after having fallen in love with the sweet potato gnocchi I had at The Village Pub awhile back. Once it was done, I needed to create a meal for it. So I use that same Village Pub meal for inspiration, though, that meal had ahi tuna. The sheet amount of deliciousness contained on this plate cannot be described. Though, I think I'll make the gnocchi with regular flour instead of whole wheat in the future. (though, I still have four servings of this batch to get through). And I've discovered I'm not a huge fan of catfish, so I probably won't be seeking it out for future fish dishes. And I will most definitely be making those brussels sprouts again. I am totally in love with cooking them all pulled apart rather than as whole or even halves. They just get so much more enrobed in the flavor. And yes, I did mildly overestimate on portions (I'd never made a single component on this plate before this evening) but this whole plate of food was 585 calories, so definitely not bad at all, though it could easily be reduced with more normal portions. lol
tip: if you attend a funeral in Tokelau, don't try to eat all of this! Firstly you won't manage it and secondly, it's supposed to be mostly sent home for the family to eat- don't leave them hungry!
